Fibre Rich, Fudgy Brownies
Enjoy the gooey, fudgy deliciousness of these chocky brownies whilst boosting your fibre intake. Fibre never tasted so good!
INGREDIENTS
- 1 1/2 cups black beans (drained and rinsed well) (250g after draining)
- 2 tbsp cocoa powder
- 1/2 cup oats
- 1/4 tsp salt
- 1/3 cup maple syrup or honey (or sweetener of choice)
- 1/4 cup coconut or vegetable oil
- 2 tsp vanilla extract
- 1/2 tsp baking powder
- Generous 1/2 cup chocolate chips
METHOD
Preheat oven to 180 C
Combine all ingredients except choc chips in a food processor, and blend until smooth
Stir in the chips, then pour into a greased 20×20 tray
Optional: sprinkle extra chocolate chips on the top
Cook for 15-18 minutes, then leave to cool before slicing
Should make 9-12 brownies - you chose the size
