Fibre Rich, Fudgy Brownies

Fudgy black bean chocolate brownies on bench

Enjoy the gooey, fudgy deliciousness of these chocky brownies whilst boosting your fibre intake. Fibre never tasted so good!

INGREDIENTS

  • 1 1/2 cups black beans (drained and rinsed well) (250g after draining)
  • 2 tbsp cocoa powder 
  • 1/2 cup oats 
  • 1/4 tsp salt
  • 1/3 cup maple syrup or honey (or sweetener of choice)
  • 1/4 cup coconut or vegetable oil 
  • 2 tsp  vanilla extract
  • 1/2 tsp baking powder
  • Generous 1/2 cup chocolate chips

METHOD

Preheat oven to 180 C 
Combine all ingredients except choc chips in a food processor, and blend until smooth
Stir in the chips, then pour into a greased 20×20 tray
Optional: sprinkle extra chocolate chips on the top 
Cook for 15-18 minutes, then leave to cool before slicing
Should make 9-12 brownies - you chose the size
